It is very lean and he always mixed in a little pork to hold it together better. It is a little stronger tasting than beef, buffalo or lamb. If cleaned right you can almost remove all the gamy taste too. Just have to make sure the hair dose not touch the meat when cleaning. Something about the oils in the hair. But Onkel the venison sausages are awesome! ;)
