Here is the second half of the crawfish story.  Here are some pics of the crawfish omelet.  Just take the etouffee from the "surpise from wifey" thread.   Take 2 or 3 eggs, scramble, and cook into a round shape.  Spoon etouffee on to half of  omemet.  Then fold over and cover all of eggs and, voila.. you have a crawfish omelet.  I promis if you like seafood and eggs you will love this.  The texture of the eggs and crawfish go well together.  Also remember, this is a spicey dish.  ENJOY :D

Great stuff!  My wife's from New Orleans, so we get back a lot, eat a LOT, and that looks good enough to hold its own with the real thing!  MMMmmmmmmmmm
