Reminds me of those 80's stone cased watches. The material needs to be too thick and bulky to be durable enough to make a watch case out of.

... just like stone tho, wood may lend itself better to the manufacture of dials. You could laminate to a thin metal dial substrate and pad print on top of it, or try to 'relief cut' numbers into it to reveal lume, much like Panerai does with thier sandwich dial.

You could use woods with a superfine grain like lacewood or an interesting burl. Unfortunately, even at that, I could never see a look like that going 'high end'. I think it would always be considered something of a novely, even if well done :( .
