I may be wrong(a not uncommon occurence) but I think exhibition cases were common way back when pocket watches were the norm. I seem to remember seeing old pocket watches in which one could view the movement.

Perhaps this was carried over to the wristwatch at some point in it's early developement.

I have no idea who was first but it may very well have been started long ago.
