 From my personal experience Rolex certified watch makers are about as good as you are going it get.  They are not generally top tear, but at top tear watch maker will not usually work on a watch that he or she was not responsible in creating.

Plus one that has been at it for long enough, has worked on the 7765.  They will charge for there time, but if it is a prized piece then get it serviced and regulated.

Run away from anyone that gives you a firm quote with out putting it in a timer, because they do a lot more than just measure the speed of the balance wheel.
