The short answer is testing above the level of COSC the movements are tested in watches with the hands and in real cases, not in case holders.

COSC is a lower form of testing a movement under controlled conditions with the movement not installed, or with the real hands or any thing really that will be used in the final watch.

There is a lot of info if you down load all of the files and spend the time really reading and referencing the info.

The Geneva seal is legislated in the Geneva, kind of like "Swiss Made".  The two have little to do with each other.
